A CENTURIES old recipe for Speech House pudding is to be resurrected on national television by Yvette Farrell from Harts Barn Cookery School, near Longhope, this month.

Yvette will be demonstrating how to cook the pudding on Countrywise Kitchen (ITV 1 July 25, 8pm).

The producers of the programme stayed at Speech House and visited the cookery school after which they decided the beautiful setting was an ideal venue to showcase regional cooking.

Yvette, who admits to a passion for local ingredients and recipes, wanted to demonstrate something unique to the area and chose Speech House pudding.

According to tradition the pudding was served to Charles 11 on his visits to Speech House which was then a hunting lodge. It was also said to be a favourite with the verderers.

The Speech House is to feature the pudding on its menu from next Monday. Harts Barn Cookery School will demonstrate the recipe during the 'Plum Crazy' Festival in August.
